Kettle Corn

I love me some kettle corn!  Every time we go anywhere that sells it I always have to buy a bag.  I love fairs and festivals for just that reason.  Pop Corn in general is a favorite snack of mine so it is only natural that I love kettle corn too.  Now I have figured out how to make it at home it can be dangerous!!

Today just so happens to be National Popcorn Day.
 
There are several different types of kernels.  These just so happen to be blue.  They start out blue and when they pop the inside is blue.  It makes pretty popcorn! I often use the off brand at the store or even the kind that the boyscouts sell.  {The bottom picture is from that kind.}

To make my kettle corn I always combine my kernels, sugar and salt in a measuring cup or bowl while my oil is heating.

I then dump the mixture into my popcorn maker.  I have the kind that has a rotating arm but when I am making kettle corn I still stand there and give it a few shakes every couple of seconds so that the sugar doesn’t burn.

Homemade Kettle Corn
recipe adapted from Savory Sweet Life
 
Ingredients
1/4 cup vegetable oil
1/2 cup popcorn kernels
1/3 cup sugar
1 teaspoon kosher salt

Directions:
Combine all the ingredients above in a measuring cup and give a quick stir.  Heat oil in your popcorn maker.  Test the oil by adding a few kernels and waiting until they pop.  Then add popcorn, sugar and salt mixture giving it a quick stir and then cover with lid. My pop corn popper rotates the stuff in the bottom but I help it along by giving it a little shake several times.  I want the sugar and the salt to start dissolving in the oil before the corn starts popping.  When the popping slows down, {after about 3-4 minutes} remove immediately from heat and pour into a large bowl. Watch out because the sugar stays on the popped corn and is HOT!! Serve immediately and ENJOY!!

My name is Sonya and I am married to a wonderful man who is truly my best friend. I am the proud mommy of Lauren and our newest addition Colton! I love to cook, bake, read, scrapbook and I am a photography enthusiast. I also love to be around my large extended family. I have 4 nieces and 5 nephews.

Brian, is my wonderful loving husband. My best friend and the father of my children. He loves being a daddy, boxing, Muay Thai and working out.

Lauren is our 4 year old daughter. She loves her Daddy, running and being outside. She also is a big fan of "neighs" (horses). She amazes me everyday at all the new words that she can say and the new things she is learning. It blows my mind the things that she comes up with. She is such a great kid!

Colton, AKA, Little Man, is our newest addition to the family. He has brought us so much joy. Right now he loves to eat, sleep and is learning to walk. Colton was diagnosed with hip dysplasia at 6 weeks old and has been wearing a Pavlik Harness since 7 weeks. He wore the harness full time for 8 weeks and then part time for 6 weeks for a total of 14 weeks. Having hip dysplasia hasn't slowed him down one bit. He can crawl and has recently started walking
