You can do this recipe several different ways. I used boneless skinless chicken breasts and cut them up into several pieces because that is what I had on hand. You can also use a whole chicken and cut it up or just bake it as it. However you prefer!
Roasted Chicken with Garlic and Potatoes
Ingredients
3 pounds of chicken cut up in to several pieces
1 pound small red potatoes quartered
20 garlic cloves
2 carrots, sliced
2 sprigs fresh rosemary
1 teaspoon salt
1/4 teaspoon freshly ground pepper
4 teaspoons olive oil
Directions
Preheat the oven to 425. Spray a large roasting pan with nonstick spray. Combine the chicken, potatoes, garlic, carrots, rosemary, salt and pepper in the pan. Add the olive oil and toss to coat.
Bake, stirring occasionally, until the vegetables are tender and the chicken is cooked through. About 50 minutes.
